seared tuna

When it comes to fish, tuna tops my list. Preferably sushi-grade so I can eat it ALMOST completely raw. I don’t eat much beef and whenever I got to steakhouses this is what I look for, but I’d never cooked it myself. Fish is still somewhat of a mystery to me. But I figured I’d try. Rather than ruin a $20 piece of meat trying to concoct my own recipe I fell back on Tyler Florence’s version (I love everything he makes).
