So my discriminating, vegetarian 7 y.o. is starting second grade tomorrow. I am already in a funk about what to send in her lunch box.The fact that I got one of those new, snazzy lunch sacks that keeps itself cold will not impress her if she opens it up to find a PB&J, baby peeled carrots, cucumber slices and sunflower butter cookies AGAIN. Vegetarian School Lunch Ideas?

So my discriminating, vegetarian 7 y.o. is starting second grade tomorrow. I am already in a funk about what to send in her lunch box.

Welcome Wyly!!! As a personal Chef, I cook for kids daily and they have food allergies as well as vegetarian options per the request of their parents. I suggest gluten free pasta, with homemade tomato sauce. I use a dehydrator and make dried fruit skins and whole fruit pieces for snacks... Steamed organic cauliflower, made into a puree as "mash" served with Crispy tofu is excellent. Hope these suggestions help..
