Mango-avocado stuffed chops (see group photo)

I don't have an exact recipe, as I tend to stuff the pork chops with whatever I have on hand, depending on what season it is. Summer fruits/veggies are the best!!! I use avocado, mango, apricot, all fresh...with onions, cilantro and some Mrs. Dash or salt-free seasoning.

Slit the chops, brown on each side, stuff, cover with a lid to help steam, serve with rice or noodles, a nice salad, corn on the cob.......it's the bomb!

I am going to roast a whole Crown Roast of Veal. I Love the winter time and for the New Year we will be in our cabin. I will slow cook a cassoulet... So excited, the best part is searching and shopping for all the ingredients...

For The Christmas dinner at my sisters, We are bringing for a side dish,mashed sweet potatoes, another idea is sweet potato pacakes, very tasty add a dash of marshmellow fluff, we bake them often. Merry Christmas.Michele

Tuna Burgers, mix drained tuna, 3 cans, i egg,1 seeds taken out Halopino pepper.3/4 italian bread crumbs,dash of spicy brown mustard, cook in a skillet coated with olive oil, brown both sides, serve on seeded roll with mayo lettuce tomato & sliced vidalia onion.serve with home made sweet potato frys.

Best wishes in your eating plans, We have Noticed the Portobello mushroom cooked like a burger idea, with red pepper slices & vidalia onion,slice of romaine & red tomato, on a seeded bun with mayo, are delicious, our daughters like the veg. burgers, in frozen section, not sure if they contain soy, I didn't realize soy a digestive problem, we love choc. & vanilla soy milk.Michele

It's fun creating good meals for our family, our oldest in college, our youngest a busy teenager, when we are all together such a joy!When my husband & I get a chance to eat out, we'll often mention we cook better,Its fun just getting out.

Wow, 6 pounds on vacation is VERY impressive! Way to go. I've resolved to buckle down and stay consistent with my exercise and be more aware of my portion size. I have a doctor's visit coming up early next month and I know he'll holler at me when he see's my weight. I'm up 7 pounds since my last visit with him. I need to be hollered at though. LOL. My husband's always saying "you look just fine to me".
