Mango-avocado stuffed chops (see group photo)

I don't have an exact recipe, as I tend to stuff the pork chops with whatever I have on hand, depending on what season it is. Summer fruits/veggies are the best!!! I use avocado, mango, apricot, all fresh...with onions, cilantro and some Mrs. Dash or salt-free seasoning.

Slit the chops, brown on each side, stuff, cover with a lid to help steam, serve with rice or noodles, a nice salad, corn on the cob.......it's the bomb!

In our veggie garden this year:  5 different tomato plants, rhubarb, green and red bell peppers, jalapeno, cherry and banana hot peppers, beans, peas, cukes and a few herbs:  cilantro, basil, rosemary and thyme.  How about you?  Do you have a large plot, or do you apartment garden?

Happy New Year everyone, I've been so lax on this page, I'm really sorry.  Go ahead and share your own recipes/thoughts/tips, don't be shy.  Please!!

I've got three containers of frozen chili thawing, need some ideas...besides just reheating!  Lemme know!

I am going to roast a whole Crown Roast of Veal. I Love the winter time and for the New Year we will be in our cabin. I will slow cook a cassoulet... So excited, the best part is searching and shopping for all the ingredients...

Shopping this weekend, baking next.  Can't wait to try some new recipes (egg nog bread), also instead of making my normal peanut butter blossoms, I'm going to switch things around; a sugar cookie with a Candy Cane KISS, doesn't that sound yummy?  What are your baking treats this year?

Ya'll - feel free to post a favorite recipe. I sometimes forget about this page (anyone want to moderate?)...right now I'm still feeling autumn; it's officially arrived, the leaves are past during color, they are now dropping off the trees at a record rate! Gonna chop, season & throw some sweet potato fries in the oven for lunch, what are you cooking/eating?

The leaves are turning color, it's starting to get cooler -- what are your favorite Autumn comfort food recipes? I love when my husband makes a big pot of chili, it's my job to make a big pan of corn bread! I'm the queen of casseroles in the winter, not always pasta, because anything that can withstand at least 1/2 an hour in the oven is fun for me to create! Share your ideas!
