An introduction to pleasure and neccessity....

if you're like me then you know the joys of licking the plate clean after the foie gras has been finished, spreading your bread with more butter than it can hold then throwing it up in the salamander to get all soaked up, eating the lardons straight from the pan, paying particular attention to transferring the duck confit for storage, and diving headlong into the triple cream cheeses. i'm talking about FAT; it's where the flavor is (wouldn't that be a great food campaign? sadly no).

while i believe everything is good in moderation, i literally MELT when it comes to fat. however, i haven't found any worthwhile recipes involing fat. of course, there's the larding, barding, rendering, and baking, but i've found more recipes for NON-fat on the internet. i don't mean to sound barbaric, but i LOVE getting to that golden nugget at the center of a good ribeye steak. have we gone soft?

if you know of any recipes, restaurants, chefs, or books involving this most important flavor factor that is fat, please JOIN THIS GROUP. i know there are people out there like me that cover their meatloafs with thick cut bacon before roasting, use real lard (NOT CRISCO) for their buttermilk biscuits and piecrusts, and asks for an extra dousing of schmaltz to their matzo ball soup so that it sticks to your lips with every spoonful....

oddly enough, i started this group about two or three years on myspace, but i don't think it had the right audience. hopefully it will grow with this new site. Cheers!
